Bincho Yakitori brings Tokyo's late-night izakaya vibes to Brighton, inspired by chef David's years working in Japan – days in the kitchen, nights in backstreet izakayas. This place is all about food served unpretentiously, but with a focus on the essentials. The menu changes every week, but usually includes skewers, snacks and sharing plates, grilled over natural fire and served as they're ready – no starters, no mains. The drinks list keeps things casual with Japanese beers, sake (both familiar and lesser-known), whiskies, and the occasional cocktail.

One of my favourites in Brighton. Cool counter-top dining and unreal food. The chicken skin skewers were SO good.
