Furna is chef Dave Mothersill's first solo restaurant, tucked away on Brighton's New Road, serving a multi-course tasting menu that celebrates British-grown ingredients with a modern European twist. After 20 years at the city's top spots, Mothersill brings his memories, travels, and culinary skills to dishes like mushroom agnolotti with Wiltshire truffle, milk-brined veal sweetbread, and salt-aged Sika deer with bitter chocolate, although the menu does change. The Georgian-period dining room is intimate and thoughtfully restored, while the wine pairings span the UK, Japan, Italy and Lebanon.
