Fingerfoods är något av det bästa och smidigaste som finns nu när sommarens alla fester och högtider börjar smyga sig fram. I det här receptet har jag valt att använda mig av pinfärsk lax (gärna mitt biten) som jag köpt i fiskdisken i min lokala matbutik, men det går givetvis bra att använda sig av exempelvis tonfisk, strimlad kyckling eller stekt scampi.
Ingredienser för 20 st båtar
10 st mini gurkor
3 dl sushiris, koka enligt anvisningarna på förpackningen
3-4 msk mirin eller risvinäger
250g lax, rå och färsk
2 msk majonnäs, jag föredrar att använda japansk Kewpie mayo
1 msk sriracha
2 msk japansk soja
1 tsk sesamolja
1 nypa salt
Förslag på toppings:
- Vårlök
- Rostad schalottenlök eller lök
- Sesamfrön, min favorit är kimchirostade sesamfrön

Sushiris
Börja med attt koka sushiriset, det är väldigt viktigt att du sköljer riset med kalltvatten upprepade gånger innan du börjar koka riset. Har du en dålig erfarenhet av att koka ris i allmänhet? Lägg locket på och börja med att slå på plattan på medellåg värme, låt det sedan koka i ca 10 minuter. Sänk därefter värmen till den lägsta och låt riset stå med locket på i ytterligare 10 minuter. Stäng sedan av värmen och låt riset stå och vila i ett par minnuter innan du börjar blanda det med mirin.
Laxröran
Skär laxen i små kuber. Lägg allt i en bunke och smaksätt med majonnäs, sriracha, japansk soja, sesamolja och salt. Gillar du det starkare, addera då mer sriracha!
Gurka
Dela gurkorna i två delar på längden. Gröp ur innanmätet på gurkan med hjälp av en tesked.
När alla tre komponenter är klara har det blivit dags att sätta ihop våra små båtar! Fyll gurkorna med en matsked av sushiriset, toppa med laxröran och avsluta med lite toppings!
