Esti, a Greek-Australian fusion restaurant, has taken over the kitchen at TT Liquor for an exciting six-month residency.

It's inspired by founder Kostas Vais' Greek heritage and childhood in Australia, who has crafted a menu of fire-cooked food using high-quality British seasonal produce with a range of native Australian herbs and spices. Head chef Sal Galasso will also be working alongside Kostas, and he has worked in some of Australia's best restaurants.

Dishes will be served in a traditional sharing style and will feature cooked, charred lamb ribs dressed with tzatziki and desert dust, an Aussie spice mix. Other highlights include Cornwall catch of the day served with macadamia skordalia and garlic-spiked Greek dip and Octopus braised in spicy bush tomato sauce and served with a fresh green salad.

Since it's held at TT Liquor, you can only expect big things regarding the drinks. Their bespoke cocktail menu will be available alongside beer and wine.

Although it's only a six-month residency, Esti has plans to hopefully open a permanent residence when Autumn comes around. Fingers crossed.

Enjoy Esti's menu at TT liquor from 12 March 2023 for six months.
