Baccalà sets a new gourmet standard with its Italian EVOO pairing dinner

Forget wine – the Italian restaurant's innovative seasonal experience puts a new twist on tasting menus.

Bermondsey restaurant Baccalà is known for its appreciation of quality olive oil, offering extra virgin olive oil tastings for groups while also making ample use of the premium ingredient in its day-to-day cooking. Their New Harvest EVOO Pairing Dinner goes a step further, however, celebrating the arrival of freshly pressed Italian olive oils with seasonal dishes designed to highlight their regional variety, depth of flavour, and transformative properties when used skilfully and with intent.

Built around olive oil, each of the three or five courses showcases a different new harvest olive oil, sourced from small Italian producers and corresponding to the seasons. Dishes include the likes of tuna tartare or grilled prawns and squid, with dessert getting its own olive oil pairing as well.
