Naz Hassan (30 July–3 August)
After popular residencies at Crispin, Oranj, and The Sea The Sea, Naz Hassan, the newly-crowned king of London's pop-up scene, brings a week of unique Bangladeshi-Italian dishes inspired by his heritage, including creations like 'Stuffed courgette flowers with paneer bhurji' and 'Lobster claw gholi bhaji with burrata'. With a decade of experience at top London restaurants such as Clipstone and Pidgin, Naz is rapidly emerging as one of the industry's most popular and talented chefs.

Rahel Stephanie (6–10 August)
Rahel Stephanie, also known as Spoons, is currently the hottest name in Indonesian cooking. Initially a plant-based project, Spoons now offers an omnivore menu while still highlighting the complexities of Indonesian flavours, featuring dishes like 'Grilled Marinated Beef Ribs, Spiced Kecap Manis' and 'Bakwan' (crispy corn fritters with andaliman-infused whipped tofu). Rahel's pop-up events have been wildly successful, selling out quickly, and this is your chance to experience her vibrant Indonesian cuisine over five nights on Charlotte Street.

Nazareno Mayol Curti (13–17 August)
Born in Uruguay and trained in France, Nazareno Mayol Curti has made a name for himself at renowned restaurants like Aramburu, Astrid & Gaston, David Toutain, and Kadeau. After a successful residency at Fulgurances in Paris, where his innovative menus explored texture, bitterness, and spice, co-founder Rebecca Asthalter hailed him as one of their most talented and creative chefs. Next, he brings his unique flavour combinations to London, featuring dishes like 'Chanterelles, Almonds, Apricot,' 'Cod, Mussels, Whey,' and 'Duck, Juniper, Sorrel, Black Garlic.'

Javier Rodríguez, El Papagayo (20–24 August)
Argentinian culinary superstar Javier Rodríguez returns to Carousel, ten years since his first residency and theirs. His project El Papagayo, ranked among the top 100 restaurants in Latin America, champions regional traditions from central Argentina and has sparked a nationwide culinary movement. The upcoming 12-course tasting menu reflects Córdoba's geography and Javier's global culinary experience, featuring dishes like 'Lamb & Roasted Fig Tartare,' 'Humita with Smoked Scamorza,' and 'Grilled Flatbread with Roasted Bone Marrow.'

Jaime Torregrosa, Humo Negro (27–31 August)
Ranked No. 44 in Latin America's 50 Best, Humo Negro is the dynamic Colombian izakaya from rock star chef Jaime Torregrosa. After leading top restaurants like Fäviken, Ca Sento, and El Chato, Jaime's debut features bold flavours inspired by Latin American, Nordic, and Japanese cuisines, using sustainable Colombian produce.
