Fitzrovia wine bar and kitchen residency Carousel, known for hosting some of the most exciting culinary talent on a weekly basis, is starting the new year – and its own second decade – strong. Noma alumni feature heavily among January's crop of pop-up events, and there's no shortage of top-notch gourmet dining to help brighten up the gloomiest month of the year. See below for more info!

Edoardo Fiaschi, José Conde and Jessica Natali, Nudo (3–18 January)

Nudo, a renowned culinary hotspot on Ibiza's serene Es Figueral beach, celebrates bold Mediterranean seafood with global influences, crafted by a trio of chefs who trained at Noma. Signature dishes like BBQ cured monkfish tail and prawn tortello showcase their innovative approach, paired with Balearic wines selected by sommelier Loli. In early 2025, Nudo brings the spirit of Ibiza to Charlotte Street with a special residency, offering a taste of the island's coastal magic without leaving London.

Tomás Gormley, Cardinal (21–25 January)

Tomás Gormley, the Edinburgh culinary sensation, continues to impress with his latest venture, Cardinal—a hyper-local, 24-seater with an open-fire grill and a strong sense of place. Following the success of Michelin-starred Heron and neighbourhood favourite Skua, his contemporary Scottish menu shines, featuring standout dishes like lobster poached in shell-infused butter smoked over whiskey barrel staves. Culminating with Burns Night 2025, his week-long residency promises a spectacular showcase of his innovative and flavourful creations.

Joyeta Ng (28 January–1 February)

Fresh from Noma's Kyoto pop-up, Joyeta Ng brings her heartfelt Cantonese cooking to the table for a week-long residency. Born in Hong Kong and classically trained in Japan, Joyeta honed her craft at acclaimed Michelin-starred kitchens like Den, The Chairman, and Kitchen Table. Her inventive, home-style dishes – like grilled Mangalitza char siu pork and scallop with vermicelli and salted lemon – promise a Lunar New Year celebration filled with comfort and culinary flair.
