Michelin-star chef Tom Brown celebrates a taste of Cornwall at Cornerstone

Michelin-starred chef Tom Brown, originally from Redruth in Cornwall, has collaborated with Cornish Orchard to feature their new Naturally Sparkling Cider, Avalen, at his Hackney restaurant, Cornerstone

Available until May 12th, Avalen will be on Cornerstone's sparkling wine menu and paired with select dishes personally curated by Chef Tom Brown. The partnership aims to highlight Cornwall's culinary world, with Avalen complementing Cornerstone's signature dishes, such as the Chalk Stream Trout Pastrami and Hake Kyiv. 

The drink is also featured in a special heritage mackerel dish, infused into a jelly pate to add tart-tasting notes that contrast with the smoked fish. To round it all off, Cornerstone is launching a limited-edition Cornish Orchards Spritz, using Avalen for a slight twist on a seasonal classic. 

Chef Tom Brown expresses excitement about the partnership, stating, "Coming from Cornwall, I've been lucky to experience the wide array of produce my home county has to offer. It's the birthplace of some amazing products and creators, and I'm excited for this partnership with Cornish Orchards to showcase a true taste of Cornwall. Not only that, the taste of Avalen is so unique, and I'm looking forward to showing how we've incorporated that into the Cornerstone offering."

Chris Newton, Head Cider Maker at Cornish Orchards, says, "Avalen is a truly Cornish cider, highlighting the best of the region's ingredients and artisanal cider-making processes from Westnorth Manor Farm. Avalen is available at Tom Brown's Cornerstone from April 12th until May 12th.
