January in London is not exactly the time of year to soak up the sunshine in the UK, and the NHS has been reminding us (politely, but firmly) that from October to early March, most of us aren't making enough vitamin D from the sun alone. Enter Pizza Pilgrims, with a solution that involves plenty of carbs and plenty of cheese.
The cult pizza chain has launched a limited-edition Vitamin P pizza, on menus from 5 January to 8 February. The headline ingredient is UV-enriched shiitake mushrooms from a UK grower, exposed to UV light so their natural ergosterol converts into vitamin D. In practical terms, that means a portion of these mushrooms can help you amp up towards your recommended daily intake, which is just perfect when the sun is still clocking off at 4pm.
Each Vitamin P pizza comes topped with around 100g of the UV-boosted mushrooms, sitting on a mushroom pesto base with Fior di Latte, smoked provola, EVOO and a glossy egg yolk in the middle. It's vegetarian and very much still a Pizza Pilgrims pizza with a signature chewy base.
