Chef Joo Won, whose past experience includes a lengthy stint as the head chef of the Michelin-starred Galvin at Windows, has turned his pop-up venture permanent. At his inaugural restaurant Cálong in Stoke Newington, he serves classical European-style cuisine inspired by the bold flavours of his native Korea, with signature dishes such as kimchi risotto and “JFC” fried chicken thigh.
