Before moving to a larger venue in Shoreditch, it could be quite challenging to get a table at Nest. Though venue size was a factor, the biggest culprit was the changing set menu that combines sustainably farmed British produce with only one meat in the kitchen at a time (except during veg and seafood season) in a bid to avoid waste.
