Carousel celebrates its tenth birthday in October

Wine bar and kitchen Carousel has been bringing some of the world's foremost culinary talent to Fitzrovia for a decade now, and it's not showing any signs of slowing down. In fact, to celebrate their tenth birthday, they'll even be dialling things up a notch. Santiago Muñoz, Maizajo (1–5 October)
Maizajo, a popular taquería from Mexico City's Condesa neighbourhood, is known for its vibrant atmosphere and iconic tacos served on freshly nixtamalized heirloom corn tortillas. Founder Santiago Muñoz, passionate about reviving maíz criollo, expanded his tortillería into a unique three-in-one destination, blending a mill, taquería, and restaurant to create innovative dishes like prawn tacos and the celebrated Wedding Tamal. With a focus on fresh ingredients and fair-trade partnerships, Maizajo brings authentic, inventive Mexican street food to Carousel under Chef Santiago's expert guidance.

Kieran McLaughlin, Pauli (8–12 October)
Long-time friend of Carousel Kieran McLaughlin has realised his dream by opening Pauli, a standout new restaurant in Copenhagen's Sydhavn, blending laid-back neighbourhood charm with refined cooking. Known for his work at La Banchina and his imaginative, ethically sourced tasting menus, Kieran has gained a loyal following in the city's culinary scene. At Pauli, he showcases 'new Nordic' cuisine with international influences, offering bold dishes like squid with chanterelle and lamb with beach kale for an unforgettable dining experience.

Carousel's 10th Birthday (15–19 October)
Celebrating ten years of bringing some of the most exciting culinary talent in the world to Fitzrovia, Carousel is dialling up things a notch by doing what it does best, but at a more intense clip. Across four days, they'll be hosting a selection of their all-time favourites, including a secret special guest.

Vasilis Chamam, Poster (22–26 October)
Thessaloniki's dining scene is booming, and Poster, led by chef Vasilis Chamam, has quickly become the city's hottest restaurant. Drawing from his diverse heritage—Greek, Jordanian, Palestinian, and Lebanese—Vasilis offers a fresh take on Greek cuisine, infusing it with global influences shaped by his 20 years in London. Poster's bold menu features inventive dishes like grouper with grilled okra and grapes, cabbage souvlaki with XO bagna cauda, and chilopites pasta with pork knuckle broth, reflecting his culinary journey of mixing cultures, ingredients, and memories.

José Figueroa, Carmelita Molino y Cocina (29 October–2 November)
Tijuana is redefining itself as a vibrant culinary hotspot, thanks in part to José Figueroa and his acclaimed restaurant, Carmelita Molino y Cocina. Fresh off earning a Bib Gourmand in Mexico's inaugural Michelin Guide, José celebrates Baja's seafood bounty with a modern twist, serving dishes like Cornish tuna warayaki and a generous seafood platter featuring scallops, shrimp, cockles, and oysters. Inspired by his grandmother's warmth and traditions, José combines family heritage with world-class culinary training, offering a bold, flavour-packed menu that reflects Tijuana's evolving gastronomic scene.
