On Saturday, 22 February, Chef Chet Sharma will host Chef Endo Kazutoshi from the Michelin-starred Endo at the Rotunda for a one-off dinner at Bibi. Together, they've crafted a brand-new selection of dishes co-designed by the chefs, using ingredients from both restaurants, along with signature items like Endo's renowned business card nigiri, Ikejime trout dokhla, and achari British wagyu with mooli.
Chef Endo is famous for his method of sourcing top-notch ingredients and forming personal relationships with select fishermen in Cornwall and Scotland. His Edomae-style sushi draws inspiration from the age-old sushi traditions of Tokyo, marked by precision, elegance, and distinct textures.
In contrast, Chef Chet's cooking is bold and dynamic, bringing intense spices and seasonal British produce to the forefront. His dishes are often elevated with the smoky and charred flavours prominent when using the sigree grill.
Chef Chet Sharma shared his excitement about the collaboration: “We are so looking forward to hosting Chef Endo at BiBi. Ever since we met years ago, we've been planning to work alongside one another in the same kitchen. Working with someone who is so boundlessly creative and whose cuisine is rooted in a different cultural context to mine is going to make for a truly exciting menu.”
Chef Endo also expressed his enthusiasm: “I'm looking forward to cooking with Chet and the BiBi team as it's a restaurant I love to eat in myself. All the flavours are powerful, and I'm excited to use some of them in my cooking on the night. I like to pick up inspiration from all the chefs I cook alongside, whether it's a new supplier, spice, etc., and I look forward to doing so with this dinner.”
Tickets are priced at £195 per person, which includes a welcome drink. Guests will also have the option to enjoy a wine or non-alcoholic pairing, available on request. As this is a limited-seating event, those interested in attending should book as soon as possible.
