The Seed Library at the One Hundred Shoreditch hotel is the latest venue by Ryan Chetiyawardana aka Mr Lyan of Lyaness fame, focusing on a stripped-back, analogue approach when it comes to both the setting and the drinks. These use a wide array of ingredients and rotate regularly, but remain true to the bar's ethos by putting a maker's touch on classic concoctions. The Old Fashioned, for example, is made with chestnut honey water, and the Gimlet with coriander seed. Also, DJs spin vinyl on weekends.
