His flagship restaurant, the first of several around London and the world, is located in the heart of Soho and features striking avant-garde walls that pop with colour in the otherwise elegantly demure interior with unique, carefully selected materials.
Equal thought has been given to the extensive menu that explores the popular Nikkei fusion of Japanese and Peruvian culinary traditions through dishes such as Nikkei gyoza dumplings, different types of sushi and sashimi, tostada chips, wagyu beef and more. The trendy Robata grill, entertainment as much as cooking gear, is fired up for an array of vegetables and meats, and you can also order a tabletop hibachi grill for a more personal barbecue approach.
Just like the dishes, the cocktails can come in sharing sizes and mix the different cuisines, combining for example tequila with lychee and dragon fruit in the Lychee Picante, or the clearly labelled Nikkei Negroni, which adds genmaicha tea to the classic concoction. With resident DJs and various performers on hand to lessen the wait between mouth-watering dishes, Chotto Matte's urban flair is clear for all to see.
