Launched in early 2026, Mater1a is a meticulously designed culinary experience reflecting a Michelin-starred chef's years in Japan. Balancing restraint and flavour, it immerses diners in a tasting menu from the moment they step through the door.
Having won the highest culinary plaudits with his Cali-inspired cooking at Soho's SOLA, chef Victor Garvey turns his focus eastward at his latest venture. Mater1a is an intimate affair where every detail has been carefully thought out. Seating just 16 at a time, the restaurant wastes no time in captivating guests as they enter along a softly lit passageway displaying the seasonal ingredients used in the forthcoming meal. Maintaining poise between light and shadow, the interiors have been handcrafted by a master carpenter to striking effect, while a live DJ imbues each dinner service with musical energy.
Rooted in Garvey's time in Japan, the tasting menus at Mater1a showcase his appreciation of simplicity and purity, highlighting the premium ingredients in deceptively straightforward plates. Delicate signature dishes such as gyoza of langoustine, duck liver, and preserved fig with black truffle and aged black rice vinegar are served alongside wine and non-alcoholic pairings.
