Restaurant Vilda pays homage to nature and the fantastic, wild ingredients found in Nordic nature. Their aim is to work as closely with nature as possible and to create a unique gastronomic experience using only local, sustainably-produced wild ingredients.
Vilda has a tasting menu that reflects the defined Scandinavian seasons; winter, spring, summer and autumn. During the three warmer months the emphasis is on fresh wild herbs, plants, mushrooms and berries and preparing for winter by gathering, harvesting and preserving produce. Whatever ingredients they can't source they grow themselves, often in collaboration with small organic growers.
In spring and summer, Vilda serves wild ingredients such as spruce tips, edible flowers and sweet woodruff. In autumn, mushrooms, cloudberries and their own-grown Jerusalem artichokes appear on the menu and in the winter you'll find Arctic char, langoustines from Bohuslän and game from forests all over Sweden.
Their tasting menu consists of several courses which you can enjoy with artisanal wines or their homemade alcohol-free drinks.
If you want to pop by for a simpler dinner, Vilda's wine bar is the place to be. In addition to wines they serve an à la carte menu with snacks, medium-sized dishes and dessert. The same culinary philosophy applies here; Nordic ingredients all the way, from chantarelles to moose.
