As the warm weather starts to pick up, Fitzrovia's wine bar and kitchen Carousel shows no signs of letting up with its signature guest chef residencies. In April, their crop includes culinary punks from Stockholm, an Australian live-fire master, a Michelin-starred returnee, and a unique approach to cooking from Istanbul. Read on and get booking!

Cenk Debensason, Arkestra (2–6 April)

Cenk Debensason and Debora Ipekel have created a culinary sensation in Istanbul with their new venture, Arkestra, which combines Cenk's innovative, boundary-pushing cuisine with the city's first jazz-kissa inspired bar managed by Debora, earning a Michelin star within just a year. Cenk, trained at the Institut Paul Bocuse and mentored by renowned chefs, brings a unique approach to cooking, exemplified in his practice of beginning each dish with a sketch. Arkestra promises an unforgettable dining experience with meticulously crafted and inventive dishes such as duck breast with apicius sauce and white truffle & vanilla ice cream choux.

Igni, established by chef Aaron Turner, is an ode to live-fire cooking and fine artisanal produce, acclaimed as a pinnacle of modern Australian cuisine and featured in the World's 50 Best. After honing his skills at prestigious kitchens like Noma and El Celler de Can Roca, Aaron launched Igni in 2016, quickly earning critical acclaim and awards. The restaurant, known for its ever-changing menu showcasing fire-infused dishes and a strong commitment to small-scale producers, is now a sought-after nomadic concept, with Aaron hosting a limited five-night event with signature dishes such as crumpet & aged beef tartare and fermented potato & roe.
