Low-intervention Milanese trendsetter Røst to visit Carousel

Known for hosting exciting culinary concepts from around the world, wine bar and kitchen Carousel has invited Piermaria Trischitta of Italy's Røst for a five-day residency as the beginning of its celebration of Italy's new wave.

Helmed by Trischitta, Røst has quickly made a name for itself on Italy's burgeoning dining scene. Based in Milan, the restaurant emphasises a low-intervention approach, keeping food waste low by getting the most out of underutilised seasonal vegetables and unfashionable cuts of meat, without compromising on flavour at any point.

During his September visit to Carousel, Piermaria Trischitta will serve a tasting menu highlighting his contemporary Italian cuisine. Dishes such as Mondeghili Meatballs or beef tongue with red onion and capers will be complemented by an assortment of biodynamic and organic wines.
