Expect plenty of cooling tones and maritime charm, as well as a brand-new cocktail menu, UNITY by Water, which represents a pioneering approach to mixology. Crafted with a focus on sustainability, each drink reflects the team's dedication to innovation. Headed up by Bar Manager Gaston Fusco, he has employed cutting-edge techniques to minimise waste while maximising flavour.
From harnessing rainwater through a state-of-the-art Gravity Water Filter System to utilising an ultrasonic homogeniser for repurposing kitchen ingredients, every aspect of the cocktail-making process has been well thought out. The result is a collection of drinks that taste great and champion environmental consciousness.
The cocktail menu itself is a testament to the team's diverse influences and expertise, featuring options that pay homage to regions like America, Asia, and Europe. Highlights include The Marino, a refreshing blend of cognac and pear liquor, and The Nagomi, which celebrates the harmony of nature with Japanese-inspired ingredients. Complementing the cocktails is a new selection of bar snacks, from Colchester Oysters to BBQ Pork Skewers.
