Plant-based diners and those who want to eat out in a more sustainable way will soon have a new restaurant to discover. Due to open in Hackney’s Mare Street in January, Edit aims to remove unnecessary waste and restore connection with food sources, focusing on foraging and harmless and regenerative processes.
Launched by restauranteur Elly Ward, the venue will accommodate 30 guests and serve a concise seasonal menu of modern plant-based dishes. The dining room will have a pared-back look with exposed brick, reclaimed furniture, and tables made from recycled wood waste. The site will also have a private dining room for up to 12 people as well as an internal courtyard laden with plants for al fresco dining.
When it comes to the menu, you can expect daily-changing fresh recipes like roasted salsify with smoked aioli, mushroom fricassee served with cream barley and wilted chard, and salt-baked turnip with lentil ragu. Desserts include a plant-based cheeseboard. Many ingredients are sourced from foragers and small-scale producers, and food is paired with low-intervention wines and local beers and ciders. In addition to the restaurant’s main menu, there will be a six course tasting menu with drinks pairings. With Edit opening during Veganuary, it’s the ideal time to try out the latest plant-based offering in London.
