Julian Hill, the 2023 Chef of the Year according to Australia's Good Food Guide, will set up shop for five days at the Carousel wine bar and kitchen in Fitzrovia.

The head chef of Melbourne's acclaimed Navi, as well as the craftsman behind the restaurant's delicate tableware, draws on his connection between the land and the plate, instilled during his rural childhood, to come up with creative new combinations and techniques. His tasting menus include dishes such as the signature black garlic and brook trout roe macaron, or smoked bonito with sea greens, honey and roasted smoked bone dashi.

Hill will be taking over Carousel's kitchen from 5 to 12 August, joining the venue's star-studded line-up of some of the most thrilling culinary talent in the world. You can book your spot here.
