To mark Earth Day, The Distillery at Hilton London Bankside will offer a special Earth Day Lunch created by Head Chef Ollie Couillaud, which promises to be kind to both the Earth and your wallet.
Inspired by South London and the Basque Country via a stopover in The Caribbean, the menu uses offcuts that would otherwise be discarded to create a delicious, healthy, Earth Day-inspired dish served with a mocktail. The best bit? You can enjoy all of this for just £10.
The menu consists of a Zero-Waste Veggie tortilla made with the surplus ingredients of the previous day's veggie prep, combining fennel, red onions, peppers, carrots, and herbs. This is served alongside crispy skins and a mixed leaf salad and accompanied by a Wasted Fox mocktail, a regenerative blend of pineapple offcuts and skins, ginger, lime, and mint. For £3 more, guests can add an extra zing with a shot of Bankside gin.
Chef Ollie's Earth Day Lunch will be served from Friday, April 19th, to Friday, April 26th, from 12 to 3 p.m.
