We already can’t get enough of Chef Tomos Parry’s Michelin-starred Brat, inspired by the smokey Basque cooking style, which includes grilling meats and fish over burning hot coals. They’re already established in the East End, with a rustic-style restaurant on the edge of London Fields and another sophisticated spot in Shoreditch. Now, Parry, Ben Chapman, the mastermind behind Kiln, and Super 8, the same team behind the iconic Smoking Goat, are planning to open a new venture in Soho in Spring 2023 on the former site of Byron Burger on Beak Street.
The restaurant holds a Michelin star, with a blackboard-scrawled menu chock-full of smouldering dishes packed with smokey flavours. Everything is cooked on the open wood fire, like the mutton chop with offal sausage and beans, grilled mackerel with soused tomato, and young leeks with walnut and fresh cheese. Whether the new restaurant menu will mimic that of its older siblings is yet to be confirmed, but we should expect similar Basque-style cooking techniques and seasonal produce. Watch this space.
