Growing up in the southern parts of Sweden, I visited Petri Pumpa in Lund a long time ago and tried pike dogfish for lunch. I don't like pike but this was superb. Then you get curious when you look for a restaurant at short notice in Stockholm and find a Petri.... and it turns out that there is a konnex back in time to Lund. Liking the tasting menu is not difficult if you crave elements of umami taken from Swedish cuisine. Oysters, wild salmon, pike-perch, asparagus and lamb in bite-sized elements balance well against an exciting wine package. A small touch of Japanese cuisine is found in how respectfully the fish has been handled and the miso that comes in as an interlude.
