Butter on the verge of disintegrating, at the same time resilient and with crispy touches, the taste a completely congenial mix of sooty heat and dandruff umami. The sweet potato puree fluffy, coquettish and buttery - an absolutely incomparable dish. Impressive wine list with many odd wines, fantastically nice, attentive and knowledgeable staff. 10 stars out of 5!
