Formerly the chef patron of Xier, another casualty of the lockdown era, Carlo Scotto opened a new restaurant in Mayfair. The multi-course tasting menus at Amethyst feature cleverly-prepared plates with influences from all over the world, such as burnt hay croquette and caramel miso black cod, adapting to seasonal availabilities as they come. There is also a five-course menu for lunch, as well as a pared-down six-course dinner version. In the basement you'll find Vinum, a cosy wine bar.
