Historic Ulriksdals Värdshus in Solna has undergone a transformation, partly in the form of a renovation, but also in terms of the restaurant concept. Emmer is now on site for part of the year, making the most of locally-grown vegetables and carefully selected meat and fish.
At Emmer you can enjoy a nature-forward restaurant experience with a tasting menu consisting of modern, Scandinavian food made from food grown in the inn's own vegetable gardens. The menu is completely seasonal. The inn's interiors are also thoroughly Scandinavian, with blonde wood and Nordic design.
Unsurprisingly, sustainability is an important part of Emmer's concept. A large part of that is making the most of all the land around Ulriksdals Värdshus, 1,5 hectares, to grow the vegetables and flowers that end up on guests' plates.
Emmer can even be booked for events such as birthday celebrations, weddings or family dinners. There are three different spaces with varying capacities; Queen Silvia's pavilion, the northern veranda and the private dining room. The same locally-grown and thoughtfully prepared food is served for events as in the dining room, in peaceful surroundings close to nature.
