The first guide was published in 1900 by the car tyre manufacturer Michelin. It was handed out free to anyone who bought a car.

In the Michelin Guide, food (and only food) is categorised by stars. Points for service, atmosphere and other elements are rewarded by 'Couvert symbols', crossed forks and spoons (1-5).

- Three stars in the Michelin Guide means a restaurant is worth a “special journey”
- two stars means that the restaurant is “worth a detour”
- while one star means that it is an “exceptionally good restaurant in its category”
