Och med det som grund har man skapat ett mexikanskt/amerikanskt koncept, som både känns genuint och fräscht. Skaparna själva har en matfilosofi som de kallar "Fresh Mex", något som innebär att man använder bra råvaror och hälsosamma ingredienser. Det här är en ny era av mexikansk snabbmat, som de flesta svenskar inte är vana vid.
